Pesto Pasta Salad

Serves or Makes: 1
- 1 1/ 2 cups Spring Mix
- 1 cup dry Pasta (Rigatoni or Cavetti)
- 1 tablespoon crumbled Feta Cheese
- 1 teaspoon Parmesan Cheese
- 1 tablespoon Basil Pesto
- 1 teaspoons chopped Unsalted Mixed Nuts
Boil pasta according to package.
Roast nuts on a pan for 5-8 minutes. You’ll smell the aroma, that’s when you know it’s done! Then chop into the preferred size.
After pasta is boiled, run under cold water to cool down.
Mix all ingredients into a big bowl to combine.
Put onto your plate or bowl and enjoy!
