I. Heart. Sweet potatoes fries. Always. And. Forever. Still had some avocado and yogurt mousse leftover so I used them as a dip with these roasted garlic and sweet potato fries. I've gotten quite a few requests on how to make the dressing. It's just some avocado, yogurt, olive oil, sea salt and cilantro blitzed up into a mousse. My first attempt of a chickpea omelette. Yes, the cracks are starting to show. Yes, it tasted friggin phenomenal (allow me to toot my own horn, folks. You're allowed to every once in a while) Super simple. The recipe calls for 1/2 of chickpea flour, 1/2 cup of water, 1/4 teaspoon of baking powder and whatever spices and herbs you want. I stuffed mine (hehe) with spinach, hummus, chia seeds, avocado, roasted pepper and spring onions. A late lunch for two while we work the weekend away. Today's lunch was inspired by the #OatBrunch held by @mornflake and @topchefcookingstudio last week. A somewhat cleaner version of fish and chips and mushy peas. Sweet potatoes grilled till they're nice and crunchy. Organic salmon tossed in some organic oats and pan seared with some coconut oil.
