Start your day with a fancy toast. Use sweet potato instead of bread and top it off with whipped ricotta, honey comb and mint. It's comforting, sweet, creamy and healthy!

ingredients

  • 1 large sweet potato
  • Olive oil
  • 1/2 cup sheep’s milk ricotta
  • 1 tablespoon fresh oregano
  • 1 garlic clove
  • 2 tablespoons honey comb
  • 1/4 cup fresh blueberries
  • 5 mint leaves

Method

  • Step 1

    Preheat oven to 400F. Slice the sweet potato into four slices and drizzle with olive oil and season with salt and pepper. Roast for 25 minutes.

  • Step 2

    Add ricotta, garlic, olive oil, oregano, salt and pepper. Whip with hand whisk or food processor.

  • Step 3

    Add ricotta to a piping bag and pipe onto the sweet potato toasts. Top with honey comb, edible flowers, blueberries, and mint.
