This gorgeous cocktail is made with a unique ingredient - prickly pear! Prickly pear gives this cocktail its pretty pink color and is in similar flavor to strawberry and raspberry. This prickly pear syrup is added to sweetened up this cocktail made with lime juice, mezcal and topped with fizzy ginger beer.

ingredients
- lime juice
- Mezcal
- ginger beer
- prickly pear syrup
- Lime, for rimming the glass
- Salt, for rimming the glass
Method
Step 1
Sprinkle salt on a plate and set aside. Run a cut lime along the rim of the glasses. Dip the rim in the salt-covered plate. Set the glasses aside.
Step 2
In a shaker filled with ice add the lime juice, mezcal, and prickly pear syrup. Shake for 30 seconds.
Step 3
Pour the mixture evenly into the two glasses.
Step 4
Pour the ginger beer into the glasses until the drink reaches the top of the glass. Stir.
Step 5
Garnish the drink with fresh mint and lime.
