Patty Ingredients:

  • 2 cans (32 oz) black beans
  • 1 tbsp extra virgin olive oil
  • 1 1/2 cup finely chopped bell pepper
  • 1 tsp cumin powder
  • 1 tsp ginger - grated
  • 1 tsp paprika
  • 3 gluten free bread
  • 1 1/2 tbsp cornstarch
  • 1 cup all gluten-free purpose flour
  • 2 tbsp ketchup
  • Salt and black pepper to taste

Burger Toppings:

  • Spinach leaves
  • Tomato slices
  • Cheese slice
  • Guacamole
  • Con Queso (optional)

Method

  • Step 1

    Preheat oven to 325°F. Spread canned beans evenly onto a baking tray and bake for 15 minutes until slightly dried out.

  • Step 2

    Separately sauté olive oil, ginger, chopped bell pepper in a pan over medium heat for about 5-6 minutes.

  • Step 3

    Add the beans to a big bowl and mash with a fork, leaving some larger chunks. Add the bell peppers, cumin powder and paprika/ red chili powder. Season with salt and pepper and mix well.

  • Step 4

    Crumble the bread and add it to the mix. Add corn starch, gluten-free all purpose flour and bring everything together. The mixture will feel sticky, but that’s what keeps the patties moist. Make about 6 round patties from the mix. Use oil on your hands to make the process less sticky.

  • Step 5

    Preheat oven to 375°F. Place patties on a greased baking tray and bake for 10 minutes on each side. Patties are ready! Grill the patties with a slice of cheese for 3-4 mins on a grill or on a pan on the stove.

  • Step 6

    Assemble the burger using gluten-free buns, spinach leaves, tomato slices, queso (optional) and lots of guacamole. Serve with a side of salad/ baked plantain fries and enjoy!
