Chocolate loaf cake

  • 300 grams flour
  • 40 grams cacao powder
  • 115 grams dark chocolate
  • 250 grams plant based milk
  • 1/2 lemon lemon juice
  • 150 grams sugar
  • 190 grams vegan yogurt
  • 60 odourless coconut oil
  • 55 grams sunflower oil
  • 1 tabelspoons vanilla extract
  • 1/2 teaspoon baking soda
  • 15 grams baking soda
  • 1 teaspoon salt
  • chocolate drops
  • poached pears

Method

Chocolate loaf cake

  • Step 1

    Preheat oven to 165C/329F

  • Step 2

    Combine milk and lemon juice

  • Step 3

    Sieve together all dry ingredients except sugar.

  • Step 4

    Mix together sugar, oil, yogurt, milk+lemon, and vanilla extract. Then add the melted chocolate.

  • Step 5

    Mix dry ingredients into the wet ones.

  • Step 6

    Grease your mould with oil, dust it with flour. Soak in the excess of liquid from the pears, put them into the mould and pour the batter in. Sprinkle it with chocolate drops.

  • Step 7

    Bake it until the toothpick comes out clean (usually takes about 30min)

Pears poached in spiced red wine

  • 6 Pears (choose firm pears)
  • 2 bottle (750 ml) Red wine
  • 400 grams Berry juice
  • 3 cinnamon sticks
  • 1 Star anis
  • 2 tablespoon vanilla extract
  • 4 cloves
  • 150 Raspberries
  • 1 lemon lemon peel
  • 1 orange orange peel
  • 100 Sugar

Pears poached in spiced red wine

  • Step 1

    Pour wine and juice into a pot. Add spices, peel, berries, sugar and vanilla extract.

  • Step 2

    Bring to boil and add pears.

  • Step 3

    Cook pears for 30-45 min - check your pears with a small knife, if it goes in softly then the pears are ready. They should be soft while still being able to hold their shape.
