Lamb And Spinach Curry
RECIPE:<br><br> serves 2-4 <br> ingredients:<br> splash of oil ( olive oil, ghee, vegetable oil ...whatever you like) <br> 1 lb lamb, in one-inch pieces<br> 1 can chopped or plum tomatoes<br> 1 onion<br> thumb size knob ginger minced<br> 2 cloves garlic minced<br> 2 green chilies sliced<br> 1 stick lemon grass - <br> cup natural yogurt<br> 1 3/4 cups water<br> handful fresh ( or died curry leaves, if dried use double the quantity)<br> <br> whole spices:<br> whole cardamom 3<br> whole cloves 2<br> 1 inch cassia bark<br> <br> extra fresh chili , mint and coriander to serve (optional ) <br> <br> fresh sri lankan roasted spice mix: 1 tablespoon <br><br> -lightly heat in a pan and grind to a powder ( can use a coffee grinder or pestle mortar) . make a batch and keep in an airtight jar , will keep for 6 months.<br> 2 tbs coriander seeds<br> 2 tbs cumin seeds <br> 2 tbs fennel seeds<br> half a cinnamon stick<br> 1 cloves<br> 3 cardamom<br> 1 pandan leaf <br> 1 tsp black pepper<br> 1 tsp turmeric<br> 5 curry leaves<br> <br> method: <br> 1) chop the onion and fry with the whole spices in the oil on a low heat trying not to burn approx 5 minutes.<br> 2) add the chili , garlic , curry leaves, ginger, and fry for a minute.<br> 3) add tablespoonful of roasted spice mix ( or the simple powdered spice mix if using instead) and the can of chopped or plum tomatoes.<br> 4) bash the lemongrass stick with a rolling pin and add to the sauce. <br> 5) add the pandan leaf bring the sauce to the boil then reduce. <br><br> in a separate pan brown the lamb and add to the sauce. <br><br> transfer to the slow cooker or an oven dish. <br>v add 400ml of water. <br><br> turn on slow cooker or put dish in oven on low heat for as long as possible. Cook for 4 hours at 300˚F or 350˚ for 2 hours. <br><br> At end of cooking add the natural yoghurt and mix well. <br><br> Also can add salt ( to taste ), extra fresh chili ( if wanted ) the coriander and mint (optional) . <br><br> serve with rice, indian breads like naan, parathas or chapatis and definitely a cold beer !

No effort required Lamb and Spinach curry. Assembled and put in the oven this morning and been slow cooking since. The spices infused the meat beautifully and the lamb was of course butter soft!
