ingredients

  • 1 1/2 cups grated coconut
  • 5 serrano peppers
  • 1 1/2 cups fresh cilantro leaves
  • 14 leaves fresh mint leaves
  • 2 tabelspoons jaggery 
  • 1/2 teasopon ground cumin
  • 1/2 teasopon Kosher salt
  • 1/4 cup fresh lemon juice
  • 2 pound cut into 8-10 pieces white fish
  • 1/4 teaspoon tumeric powder
  • 2 tablepsoon fresh lemon juice

Method

  • Step 1

    Wash Fish with Water and pat dry

  • Step 2

    Rub the Fish with Salt, Turmeric and Lemon Juice. Set aside for 30 mins

  • Step 3

    Preheat Oven at 375 F.

  • Step 4

    Place Coconut, Seranno Peppers, Cilantro, Mint, Cumin, Sugar, Salt and lemon juice in the bowl of a food processor, and process until the mixture is very finely chopped and like a paste. Adjust Salt as needed.

  • Step 5

    Cut the banana leaves into squares large enough to enclose the fish and layout out on a baking tray. Brush each one lightly with oil. Make

    Place a piece of fish on each square and top with Green Chutney. Wrap leaf around fish and tie with string.

  • Step 7

    Bake for 25-30 mins
