Cumin Spiced Baby Potatoes with Roasted Almonds

ingredients
- 1/4 cup avocado oil
- 1 green onion, chopped, plus more for garnish
- 2 pounds baby potatoes, halved
- 2 tablespoons cumin seeds
- 1 teaspoon mustard seeds
- 3 whole dried red chillies
- 6 curry leaves
- 1/2 teaspoon dried turmeric
- 1/3 cup tomatoes, cubed
- 1/3 cup cilantro leaves, chopped, plus more for garnish
- cup mint leaves, finely chopped, plus more for garnish
- 1/3 cup roasted almonds, slivered
- Kosher Salt
Method
Step 1
In a medium pan on medium heat, add the avocado oil and then add the green onions. Cook for 2-3 minutes.
Step 2
Then add cumin and mustard seeds. Cook until the cumin seeds start to sizzle, about a minute. Add the curry leaves, dried red chilies, turmeric. Season with salt to taste.
Step 3
Add tomatoes and cook for another minute. Stir in chopped cilantro, fresh red chillies and mint.
Step 4
Add potatoes and cover with a lid and cook on medium flame until the potatoes are cooked through, about 20 minutes.
Step 5
Once potatoes are fully cooked, Add roasted Almonds. Give a light stir and transfer to serving dish. Garnish with additional cilantro, mint and spring onions.
