French Bean & Tomato Shakshuka With Mushrooms, Basil, Feta & Parsley
We are getting the tail end of the cyclone and the weather has turned slighty chilly in the morning. For breakfast in the camper van this morning is shakshuka my chunky version with chopped tomatoes, French beans, field mushrooms, free range eggs, basil, goat's cheese. Did not have any cumin, so substituted with dukkah instead . This is great and warming to dip with freshly toasted wholemeal bread.
