I can’t believe I didn’t even know apple butter existed until last year. But now that I do, I’m obsessed! It’s sweet, perfectly spiced, and has that characteristic slow-cooked apple flavor. Oh, and the texture is velvety smooth – perfect on a toasted sourdough.

ingredients

  • 2 pounds apples, cored and sliced
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 stick cinnamon
  • 1 star anise
  • 2 cloves
  • 3 cardamom pods

Method

  • Step 1

    Core and slice 2 pounds of apples – you can skip the peeling, the powerful rapid extractor blades will completely break them down. You can use any variety but I used a mix of Macintosh and granny smith for the different textures and flavors the two offer.

  • Step 2

    Pop the apples, sugar, vanilla and spices in a heavy bottom pot or slow cooker and cook on low heat for 5-6 hours, stirring occasionally so it doesn’t stick or burn.

  • Step 3

    When the apples have disintegrated into a rich brown caramel, remove them from the heat allow them to cool before pouring them into the Nutribullet® Ultra.

  • Step 4

    Use the 30 second cycle button to whip the apples into a smooth creamy butter.

  • Step 5

    Pour into an airtight container to store in the fridge for up to one week, or into a bowl to enjoy immediately.
