ingredients
- 1 Coarse Sooji / Semolina Flour
- 1 1/4 stick Unsalted Butter
- 2 teaspoons Besan / Chickpea Flour
- 3 cups Water
- 1 1/2 cups Brown Sugar
- 5 Cardamom Pods or Pinch of Cardamom Powder
- 5 strands Saffron
- 2 tsp Milk
- 3 tablespoons Dessicated Coconut
- 1 handfu Slivered Almonds
- 1 handfu Crushed Pistachios
Method
Step 1
Take 1 and a 1/4 stick unsalted butter and melt over low heat in a heavy bottomed pan.
Step 2
Add 1 cup coarse Sooji or Semolina flour and 1-2 tsp Besan or Chickpea flour. Stir continuously on low heat for almost 1 hour till it oil starts separating and turns light golden brown.
Step 3
Prepare Sugar Syrup or Chashni. Take 3 cups water over medium heat and add 1.5 cups brown sugar. Heat the sugar till it dissolves completely in the water stirring occasionally.
Step 4
Add 4-5 cardamom pods cut lengthwise or 1 pinch of cardamom powder.
Step 5
Add 4-5 strands of saffron soaked in 2 teaspoons of milk.
Step 6
Add the sugar syrup or Chashni to the semolina.
Step 7
Turn the heat to medium / high and within a few minutes the liquified semolina will solidify as it absorbs the syrup.
Step 8
Add 2-3 Tbsp Desiccated Coconut.
Step 9
Add a handful of slivered almonds.
Step 10
Add a fistful of crushed pistachios.
Step 11
Turn off the heat.
Step 12
Serve warm or cold.
