Crispy Sweetcorn Fritters

"This is such an easy recipe to make and these delicious fritters which are perfect for entertaining or as a snack. The batter can easily be made in advance ready to use when needed. They are pan fried, instead of deep fried to keep them healthy"

Method

  • Step 1

    Steam the corn on the cob until cooked and remove the kernels

  • Step 2

    Meanwhile in a large bowl add all the dry ingredients together and mix well

  • Step 3

    Whisk the milk and lime juice together and add to the dry ingredients. Then add the corn kernels and season to taste

  • Step 4

    Heat oil in a non stick pan on a medium heat and add a scoop of batter to create as many equal rounds as you can in the pan, keeping each one separate. (I have used a pancake pan with individual rounds to get them all the same size)

  • Step 5

    After a couple of minutes flip them over and cook on the other side until nicely browned. Place on kitchen towel to absorb any excess oil. Repeat until you have used up all the remaining batter

  • Step 6

    Serve hot with a delicious chutney

  • 65 gram Plain flour
  • 30 Cornmeal
  • 1 Baking powder
  • 1 tbsp fresh Coriander leaves
  • 1 Garlic granules
  • 3/4 Salt
  • to taste. Black pepper
  • 130 milliliter of choice Milk
  • 2 finely diced Spring Onions
  • 1 fresh Lime juice
  • Cooking Oil
