Honey BBQ Crostini with Grilled Peaches and Whipped Ricotta

ingredients
- 1 large (about 11 ounces) baguette
- 3 tabelspoons olive oil, divided, plus more for grilling
- 1/4 cup TABASCO® Brand Honey BBQ Sauce, plus more, as needed
- 1/2 cup ricotta
- 2 peaches, sliced
- handful of fresh basil, chopped
- flaky sea salt, to taste
Method
Step 1
Preheat oven to 425F. Line a baking sheet with parchment paper.
Step 2
Slice baguette into ½ -inch slices. Brush bread with 2 tablespoons olive oil, coating on both sides. Place on sheet tray. Brush one side of each slice with BBQ sauce. Bake for about 12-15 minutes, flipping halfway through.
Step 3
To a food processor or blender, add ricotta and remaining 1 tablespoon olive oil. Blend for about 2 minutes until creamy. Alternatively, you can use a hand mixer and whip in a bowl by hand.
Step 4
To grill the peaches, heat a grill pan over medium heat with a light layer of oil. Grill peaches on each side for about 1 minute. Transfer to a plate and brush with a little more BBQ sauce.
Step 5
Spread each crostini with whipped ricotta, a peach slice, chopped basil and flaky sea salt.
