INGREDIENTS
1 lb boneless skinless chicken thigh or breast
2 tablespoons olive oil
2 tablespoons of your favorite whole 30 compliant poultry seasoning
1/3 of each veggie of choice per pound of meat (I used orange and yellow bell peppers, zucchini, and red onion)
DIRECTIONS
Cut chicken into 1" pieces.
Make a paste of the seasoning and olive oil and rub on the chicken pieces. Set aside while prepping veggies.
Cut your veggies into 1-inch pieces and the zucchini into 1/4" rounds (uniformity in size ensures even cooking).
Layer the chicken and veggies on the skewers, using two layers of onion each time. I like to do chicken, veggie, onion, chicken, veggie, onion.
Set grill to medium heat. Grill for about 4-5 minutes, on all 4 sides, about 16-20 minutes total. Enjoy!
