For June birthdays, end-of-year school picnics, potlucks and parties, but mostly for me me me, these s'more cupcakes (graham-flavored cakes + toasted marshmallow frosting + melted chocolate centers) are guaranteed to make Thursdays 100% better.
Shaved Asparagus Frittata
Ribboned asparagus (requires no trimming or parcooking), crumbled goat cheese (requires no grating) and optional crisped (in the final skillet) proscuitto make a quick spring weeknight frittata so easy, dinner is sorted for at least the next two nights, hooray.
Potato Kugel Skillet
Basically a massive hash brown with profoundly crispy edges, steamy-soft insides and the show-stealing complement to breakfast eggs, a dinner roast or fancy party things like crème fraîche and caviar (yessss). It's also totally Passover-legit, and always welcome.
