Today's salad: Organic baby spinach, dried cranberries, pumpkin seeds, pecans, hard boiled eggs and avocado. Dressing is an easy homemade balsamic vinaigrette using @kasandrinos EVOO. Dressing recipe (makes about 1 cup): In a mason jar, add 3/4 cup of EVOO, 1/4 cup balsamic vinegar, 1 tbsp of mustard, 1 tbsp lemon juice, 1/2 tsp salt, 1/2 tsp pepper. Close the jar and shake to mix. ?? #arrichion12daychallenge @arrichion
