Making fruit molasses is a wonderful way to add a burst of flavor to both sweet and savory dishes. I love that this recipe includes a blood orange molasses, made from pomegranate arils, sugar, water, blood orange juice, cassis balsamic vinegar and mint leaves. Sounds delicious!

We woke up to winter wonderland, school was cancelled, and with the super bowl on Sunday it feels like a long holiday weekend. I am not sure about all the rules of American football, nor do I really know who is playing, but I do have a game plan for staying on track with healthy eating. A snack tray of vegetables, nuts, crackers, hummus, soft cheese (if you're eating dairy) or cashew cheese is simple to put together, yet guarantees there will be healthy options on the table. feedfeed Hummus:

Ingredients:

3 cans chickpeas
3 garlic cloves, minced
zest of 1 lemon
3 lemons, juiced
1/4 cup tahini paste
5-6 pickled jalapeño slices or couple dashes of hot sauce of choice (optional)
1 tablespoon olive oil
kosher salt, to taste (add one teaspoon to start and add more as needed)
freshly ground black pepper

Directions:

In a high-powered blender or food processor add 1 can of chickpeas (with liquid) and other two cans, drained. Add garlic, lemon juice, tahini and jalapeños or hot sauce (if using). Blend for about 1 minute, or until mixture begins to look smooth. Slowly pour in the olive oil (with the machine running) and continue to blend until it reaches your desired consistency (for silky smooth hummus, about 2 minutes), adding water a little at a time if needed. Season to taste with salt & pepper.

Store in a pint container in the fridge, for about 5 days (if it lasts that long!).

Notes: Get creative! Try adding extras in place of the jalapeños for different hummus varieties. A few of our favorites: olives, roasted red peppers, sun dried tomatoes or chipotle peppers in adobo.

Motivation & creativity! The weekend is pretty close, so i thought i’d share some snack inspo with y’all. Snack or treat? Guess it works either way and whats better than pampering ourselves once in a while, right? Im working from home this week and I gotta say im losing track of the days, feeling like it’s the weekend every single day. Not being glued to one specific place of work is something that I find is important to me. I know its not that common, but packing up my laptop and working from different places really opens up my creativity. Seeing the same dark office over and over again has such a huge impact on my motivation. I need bright and open workspaces, a place where feel comfortable staying in, the freedom to work from different spots to find enough space to expand and play around with my ideas and my creativity. So if you feel like youre stuck in whatever it is that youre doing, go for a change. Pack up your work and take it outside, rearrange your room or work from a café. Whatever it is that might provide a change of perspective. Soak up the different environmental energy you’ll get and let the magic happen. I can only recommend you check out Julias @ju.liciously post from yesterday, where she addressed the same kinda struggles with creativity and motivation. And wherever your new workplace might be, make sure to take some snacks. The only way to keep us sane anyways! Im sure these SALTED CARAMEL PISTACHIO BITES will make the best addition in enhancing creativity and motivation!

If you happen to have missed my flurry of excitement; come the new year myself and Cindy from @nest_and_nettle will be hosting The Gathering Table; a series of long lunches at @theborrowednursery The Gathering Table is an idea. It is a way to bring into physical existence the notions of community and conversation and food of which I always speak. To give root to an otherwise virtual presence. It will celebrate seasonality and local loves... It feels like a lofty ambition to expect that others will think enough of you to warrant a seat at your table but I’m in it for love, so even if it’s just us two there to dine it will have been worth the dedication. In honour of The Gathering Table I’ve penned more insight along with this market salad on The Botanical Kitchen. It was named so for simplicity sake. A more thorough version might have read; quinoa salad with fresh leaves, dates, pistachio and pomegranate, dukkah rolled labneh, turmeric, honey and chilli roasted walnuts and a Moroccan inspired dressing - but who really wants to tout a description like that. Recipe adapted slightly from http://www.breezybakes.com/gluten-free-vanilla-cake-with-raspberry-filling-and-meyer-lemon-buttercream/
Adaptations: I baked the cake in two deep 6” cake tins and split the cake into 4 layers. I adjusted the baking time to around 35 mins but may vary depending on the oven you’re using, the recipe uses 9” cake tins. I used 2 tsp of vanilla bean paste instead of 1 ½ tsp vanilla extract.
I put crushed pistachios in-between the cake layers, on top of the frosting. I also put crushed pistachios (blended in a mini chopper) on top of the cake and round the side at the bottom.

I used 150g white chocolate, 150g double cream and pink gel food colouring (Rose by Wilton)

Meringue Kisses

To create the pink stripe effect, I turned a plastic piping bag inside out and used a toothpick to stripe pink gel food colouring from the tip upwards in lines. Then turned the bag inside out and filled it with the meringue mix before piping the kisses. The pink gel food colouring I used was Rose by Wilton.
