My weekend ended with rainbows and MISO, EGGPLANT, & ROASTED GARLIC SPREAD. (I used the talented @andreabemis recipe except I roasted a whole head of garlic and added it to the dip). This is the perfect use of the over abundance of eggplant that can be seen around farmers markets these days! Sending you positive vibes for the week.

@thefitforkfeed used the recipe linked here but also included a whole head of roasted garlic.
To roast a head of garlic, preheat the oven to 350˚F and trim about 1/4 inch off the top of the garlic bulb, so the cloves are exposed. Lay out a square of tin foil (about twice the size of the garlic) and place the prepared bulb on top.
Drizzle with olive oil and salt and pepper and wrap the foil around the entire bulb tightly. Roast for about an hour.
When cool, squeeze cloves out of bulb and add to the eggplant miso dip before blending.

Ingredients soba noodles sesame oil rice wine vinegar salt pepper broccoli florets roasted kabocha squash parsley red chili flakes Method Slice kabocha squash in half, take out seeds and cut into even pieces. Toss w/ EVOO and salt. Roast for 40 min at 375F. Toss chilled soba noodles in toasted sesame oil, rice wine vinegar, salt & pepper. Top with blanched and shocked broccoli florets (toss florets in boiling water for ~1 min then immediately using a spider spoon place them into ice cold water until fully cooled). Top with roasted kabocha squash, parsley, and red chili flakes (or spice of your choosing). Kabocha squash has incredible flavor, blending both sweet and savory. This simple soba dish takes advantage of this and allows these flavors to shine through!
