Happy 1st of May??Today I'm going GREEN with KEY LIME PIE CHIA PUDDINGS??Recipe for these sweet pies in a jar is #ontheblog?This is a really yummy way to eat pie?And also a great way to celebrate my friend @blossombudandfruit and her #bbafgogreen campaign to congratulate her on 12k?? and support Make Every Day Earth Day! These are some of the ways in which I contribute making the world greener?? 1. I started gardening last year and although I managed to grow just a few green veggies: basil, kale, chives, I'm totally hooked and can't wait to grow more of my own produce this season.?? 2. Growing our own veggies is also a great way to show my children where real food comes from (the ground and not from a factory!), and I'll continue teaching my kids about organic gardening & plant-based food, and let them take care of the garden with me?? 3. We always use recycled bags when going shopping and try to reduce the amount of plastic used in our household.??4. I don't own a car and infact can't even drive so I either walk/run/cycle/use the bus everywhere and often have my kids with me?? 5. I talk with my kids about making the world a greener & better place, and I'm sure their appreciation of clean nature &organic plant-based food will continue throughout their lives! Have a happy sweet day????

A Note From feedfeed

Pavlovas are tricky wee things - they have a tendency to collapse, but thankfully that doesn't make any difference to their taste! You just load them up with cream and top with berries, and you are away laughing! In fact, I am sure that the reason that pavlovas are served loaded up with cream is that they more often than not have a few cosmetic issues on the top (Mine always do anyway!!). Cream only enhances the delicate meringue, and you can top them with whatever you would like!

A Note From feedfeed

Recipe adapted slightly from Breezy Bakes


Adaptation Notes from @elletallulahxo : I baked the cake in two deep 6” cake tins and split the cake into 4 layers. I adjusted the baking time to around 35 mins but may vary depending on the oven you’re using, the recipe uses 9” cake tins. I used 2 tsp of vanilla bean paste instead of 1 ½ tsp vanilla extract. I also added crushed pistachios in-between the cake layers, on top of the frosting. I also put crushed pistachios (blended in a mini chopper) on top of the cake and round the side at the bottom.

For the frosting I used this type: Cream Cheese Frosting


For the Pink Ganache Drip I used a recipe from Katherine Sabbath 
I used equal parts white chocolate and double cream and pink gel food colouring (Rose by Wilton)

For the Meringue Kisses I used a recipe from Meringue Girls

To create the pink stripe effect, I turned a plastic piping bag inside out and used a toothpick to stripe pink gel food colouring from the tip upwards in lines. Then turned the bag inside out and filled it with the meringue mix before piping the kisses. The pink gel food colouring I used was Rose by Wilton.
