  • 2 pounds ground beef
  • 1/2 large onion, small diced
  • 3 cloves garlic, minced
  • 4 teaspoons cumin,
  • 2 teaspoons chili powder,
  • 2 teaspoons paprika,
  • 1 1/2 teaspoon salt,
  • as needed pepper,
  • 1/2 chipotle powder,
  • 1 teaspoons garlic powder,
  • 1 teaspoon onion powder,
  • 2 tomato paste,
  • 2 tablespoons water,
  • 4 cups shredded cheddar,
  • 16 corn tortillas,
  • as needed olive oil,

Method

  • Step 1

    In a large skillet, heat some olive oil over medium heat. Add the diced onion and minced garlic, sauté until softened and fragrant. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked through.

  • Step 2

    Sprinkle cumin, chili powder, paprika, salt, pepper, chipotle powder, garlic powder, and onion powder over the cooked beef. Stir well to evenly distribute the spices.

  • Step 3

    Mix in the tomato paste and water to create a flavorful sauce. Allow it to simmer for a few minutes until the mixture thickens slightly.

  • Step 4

    In a separate skillet, heat a small amount of olive oil over medium heat. Lightly fry each corn tortilla for a few seconds on each side until they become pliable. Be careful not to let them become too crispy at this stage.

  • Step 5

    Take each tortilla and spoon a portion of the beef filling onto the center. Sprinkle some shredded cheddar cheese on top of the beef filling.

  • Step 6

    Fold each tortilla in half to create a taco shape. In the skillet used to fry the tortillas, add more olive oil if needed. Carefully place the filled tacos into the skillet, seam side down. Cook until the bottom side is golden brown and crispy.

  • Step 7

    Once the tacos are crispy and golden brown on both sides, remove them from the skillet and drain any excess oil on paper towels. Serve the crispy beef tacos hot with your favorite toppings such as salsa, guacamole, sour cream, or chopped cilantro.
