Spinach and Mushroom Pot Pie

ingredients
- 400 gram mushrooms
- 1 cup Frozen Peas
- 150 gram Spinach
Method
Step 1
Preheat the oven to 175 degrees Melt the butter and sauté the onion and garlic until soft (around 2-3 mins) Add in the mushroom s and then cook or 5-7 mins until tender.
Step 2
Add the frozen peas, spinach, soy sauce and thyme, turn the heat to low.
Step 3
In a separate saucepan melt the butter and add the flour. mix into a paste. Gradually add the dairy-free milk, gravy granules and nutmeg and stir unto there are no lumps. Pour the sauce into the pie filling and mix together along with the reishi mushroom powder if you are using this. Cut the puff pastry into 6 even squares to fit the ramekins. Evenly spoon the pie filling into the ramekins and place the puff pastry on top, folding the excess over the edges. Bake in the oven for 25 minutes or until golden brown.
