1¼ cups gluten-free all-purpose flour¼ cup ground flax2 teaspoons ground cinnamon1 teaspoon baking powder1 teaspoon baking soda¼ teaspoon salt2 tablespoons dark brown sugar¾ cup unsweetened applesauce½ teaspoon vanilla¾ cup water, almond, rice or soy milk (can use regular milk too)Preheat and grease a waffle maker. In a large bowl, combine the flour, flax, cinnamon, baking powder, baking soda, salt, and brown sugar. Add the applesauce and vanilla, and mix. Slowly pour the water or milk into the bowl, and mix to form a batter. If the batter is too thick, add a little more water, 1 tablespoon at a time. Spoon some of the batter into the centre of the waffle maker. Spread until it's within ¼ inch of the edge of the edges. Close the lid, and cook until golden brown...about 4 minutes. Serve warm drizzled with maple syrup and top with powdered sugar/fresh berries.
