ingredients
- 3 whole peaches, sliced
- 2 ounce burrata cheese
- 5 ounces baby arugula
- 3 ounce prosciutto
- 1/2 cup blueberries
- 1/8 cups red onion, thinly sliced
- 1/4 cup olive oil
- 1/8 cup white wine vinegar
- 1 tablespoon honey
- 1 teaspoon dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Method
Step 1
Preheat the oven to 375 degrees. Place the prosciutto in slices on a cookie sheet spread apart so they aren't touching. Bake for 10-12 minutes until crispy.
Step 2
When the prosciutto is baking, make the dressing. In a jar or small bowl, whisk together the white wine vinegar, honey, olive oil, dijon mustard and salt and pepper.
Step 3
Once the prosciutto is cooled, break apart into pieces.
Step 4
Layer the arugula into two large bowls. Sprinkle over the blueberries, red onion, peaches, and prosciutto. Tear apart or cut/slice up the burrata and dollop on top of the salad. Pour over the white wine vinaigrette.
Step 5
