ingredients
- 1 whole diced green bell pepper, no seeds or stem
- 1 small diced yellow onion
- 1 clove of minced garlic
- 16 ounce ground beef 80/20
- 8 ounce ground pork
- 1/2 teaspoon cumin
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/8 teaspoon chili powder
- 1 whole dried bayleaf
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 48 ounce chicken stock
- 15 ounce can kidney beans, drained
- 15 ounce tomato sauce
- 14 ounce can fire roasted tomatoes
- 2 tablespoon tomato paste
Method
Step 1
Make sure you have chopped up the green pepper, yellow onion, and minced the garlic in advance. Place the dutch oven on the stovetop over a little less than medium heat. Pour in the olive oil and allow it to heat up for a minute.
Step 2
Next, add the beef and pork, and with a wooden spoon begin to break up a bit. Allow this to cook for about 8 minutes until no longer pink.
Step 3
Transfer the meat into a bowl lined with a paper towel and drain all the grease from dutch oven, except for about 1 tablespoon.
Step 4
We now have an empty pot again, except for a tiny bit of grease. Add the bell pepper, onions and salt into the dutch oven. Stir together and allow vegetable to soften for about 3 to 4 minutes.
Step 5
Add your ground pork and beef mixture. Then into the pot goes the garlic, spices and bay leaf. Stir and allow to cook for one minute.
Step 6
Pour in tomato sauce, tomato paste, drained kidney beans, and fire roasted tomatoes. Stir it up! Last but not least, pour in the chicken stock, and give it a good stir.
Step 7
Allow the chili to come to a low boil over medium heat, then turn heat down to low. Cover with the lid and cook for at least two hours, stirring every hour.
Step 8
Serve with your favorite toppings. I love cornbread, jalapeño, sour cream and cheddar cheese.
