ingredients
- 2 cups oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup coconut sugar
- 2 flax eggs
- 1/2 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 1/3 cup non-dairy milk
- 1 tablespoon apple cider vinegar
- 1 teaspoon vanilla extract

Cinnamon Swirl
- 1 tablespoon cinnamon
- 2 tablespoons coconut sugar
Method
Step 1
Preheat the oven to 350 F/175 C. Line a 8x4 inch loaf tin with parchment paper.
Step 2
In a mixing bowl, mix all the wet ingredients together until smooth. In another bowl, whisk all the dry ingredients together until combined. Pour in the wet mixture mix to a smooth batter.
Step 3
In a small bowl, whisk well the cinnamon and coconut sugar.
Step 4
Add 1/2 batter into the loaf tin. Sprinkle with cinnamon sugar filling on top, then pour the leftover batter on the cinnamon sugar filling and smooth over the top. Bake for 50-55 minutes, or until the toothpick comes out clean. Remove from pan, then let the loaf cool competely before slicing. Enjoy!
