A Note from Feedfeed

Made with simple, plant-based ingredients, it is a great alternative to traditional dairy yogurt. Pair it with a fruit compote and some granola for a delicious and nutritious breakfast or snack.

Recipe Card

ingredients

  • 1 cup raw cashews
  • 1/2 cups full fat coconut milk
  • 1 tablepoons juiced lemon
  • 1 tablespoons maple syrup
  • 1 tablespoons vanilla extract
  • 1/8 teaspoon sea salt

Method

  • Step 1

    Soak cashews for 2 hours in water before blending. Place pre-soaked cashews, coconut milk, lemon juice, maple syrup, vanilla and sea salt into a blender.

  • Step 2

    Puree until smooth and creamy. Stop and scrape down sides as needed. If mixture is too thick, add a little more coconut milk or 1-2 tablespoons of water.

  • Step 3

    Refrigerate 1 hour before serving to chill.

  • Step 4

    If desired, add 1/2 cup of fruit compote (recipe below) + 1/4 cup granola to each serving of yogurt.

Fruit Compote

  • Step 1

    To make fruit compote: place 2 cup fresh or frozen mixed berries in a bowl with 2 tablespoons maple syrup, 1 tablespoon fresh lemon juice, and 1/2 teaspoon vanilla extract. Gently toss.

  • Step 2

    Let stand for 5-10 minutes.
