Salad
- 1 tablespoon dry quinoa
- 1 tablespook olive oil
- 1/2 sliced red bell pepper
- 1/2 sliced green bell pepper
- 1/2 sliced yellow bell pepper
- 1 15 ounce can rinsed and drained chickpeas
- 1 minced garlic
- 1/2 ribbon persian cucumber
- 1 cup halved cherry tomatoes
- 1 sliced avocado
- 1 tablespoon fresh oregano, chopped
- 1 tablespoon fresh parsley, chopped
- 1 cup feta cheese crumbles
Method
Step 1
Cook quinoa according to package directions. Set aside.
Step 2
In a medium sized skillet, heat 1 tablespoon olive oil, then add garlic, can of chickpeas, peppers and onion. Sprinkle with salt and pepper to taste. Cook for 5 to 7 minutes, stirring occasionally.
Step 3
Whisk together all ingredients for dressing. Set aside.
Step 4
Add the quinoa into the bottom of a salad or serving bowl. Top with roasted pepper mixture. Add the ribbons of cucumber, halved cherry tomatoes and avocado slices. Sprinkle with fresh herbs. Drizzle dressing over salad.

- 1/14 cup olive oil
- 1/4 cup finely chopped kalamata olives
- 2 tablespook lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon minced garlic
- 1 tablespook fresh oregano, chopped
- 1 tablespook fresh parsley, chopped
- salt and pepper to taste
