Lemon Garlic Chicken and Orzo Soup

"Lemon Garlic Chicken and Orzo soup is the ultimate spring soup. It boasts flavors from fresh herbs, garlic, fresh spinach and carrots. ingredients

  • 8 cups chicken broth
  • 1 juice of lemon
  • 1 cup orzo
  • 2 large chopped carrots
  • 1 medium chopped onion
  • 1 rotisserie chicken
  • 2 tablespook fresh basil
  • 2 tablepoons fresh dill
  • 1 tablepoons fresh parsley
  • 2 teaspoon minced garlic
  • 1 1/2 cups fresh spinach
  • salt and pepper to taste

Method

  • Step 1

    Add all ingredients to a large soup pot, EXCEPT for the spinach and lemon juice, and bring to a boil. Boil for 10 minutes, stirring frequently.

  • Step 2

    Reduce the heat to medium-low and add in the spinach and lemon. Cook for an additional 2 minutes, or until spinach is soft and wilted. Stir occasionally.

  • Step 3

    Serve and top with fresh slices of lemon (optional) and additional fresh dill (optional)
