Salad
- 1 cup rotisserie chicken
- 1 1/2 cup halved cherry tomatoes
- 4 slices chopped cooked bacon
- 1 whole chopped avocado
- salt and pepper to taste
- 2 tablespook chopped fresh parsley
- 2 tablespoon fresh basil
Method
Step 1
In a medium sized skillet over medium heat, heat the oil. Add the garlic, corn, honey, salt and pepper. Stir occasionally for 2 to 3 minutes to heat corn through. Remove from heat.
Step 2
In the same skillet, for ease of clean up, add the chicken, tomatoes, bacon and avocado. Sprinkle salt, pepper and fresh herbs over ingredients and toss together.
Step 3
In a small bowl, whisk together the ingredients for the vinaigrette. Drizzle over the salad, then serve.
