Anyone with children can sympathize with what a challenge it is to feed your family nutritious food everyone will actually eat. I get sooo tired of making three different meals for a toddler, preteen and us adults so I have a secret weapon in my back pocket.
My kids would eat Annie’s Shells and White Cheddar for breakfast, lunch and dinner if I let them, but the hubs and I would like a little more variety in our meal plan. (Insert smiley emoji). My hack is to make two boxes of shells in a pot and dish up the kids some bowls with a plate of veggies on the side. While that cooks away, I start prepping our dinner by crisping up some pancetta (or bacon) in a skillet.
Then, when the shells are ready, I stir in the pancetta, spinach, artichoke hearts and a pinch of red pepper flakes. Since we’re going to bake the shells, I love to add a little half and half to keep it extra creamy while it bakes. A healthy shower of garlicky thyme breadcrumbs on the top make for an irresistible crunch and extra flavor. With this hack, everyone gets to enjoy a delicious dinner that’s easy enough for a busy weeknight!

ingredients
- 1 box Annie’s Shells and White Cheddar
- 2 ounces pancetta or bacon
- 1/3 cup half-and-half
- 1/4 cup frozen chopped spinach, defrosted and all excess water squeezed out
- 1/4 cup artichoke hearts, chopped
- Pinch of red pepper flakes
- 1/4 cup panko breadcrumbs
- 2 cloves garlic, minced
- 1/2 teaspoon fresh thyme leaves
- Olive oil, as needed
Method
Step 1
Preheat oven to 400° F.
Step 2
Prepare Annie’s Shells according to the directions on the package.
Step 3
In a skillet, cook pancetta or bacon until crispy, drain on paper towel. Crumble or chop and set aside.
Step 4
To the pasta, add half-and-half, pancetta, spinach, artichoke hearts and red pepper flakes. Transfer the pasta to individual ramekins or to an oven-safe baking dish.
Step 5
In a small bowl, mix panko, garlic and thyme. Sprinkle bread crumbs over pasta and drizzle with olive oil.
Step 6
Bake until the breadcrumbs are golden brown, about 10-15 minutes.
