Gluten-Free Artichoke Pasta

ingredients
- 1 tablespoons butter
- 1 chopped shallot
- 3 cloves of minced garlic
- 1 can chopped artichoke hearts
- 1 teaspoons dried thyme
- 1 teapsoons dried oregano
- 3/4 cup Earth’s Own culinary blend oat milk
- 1/2 zest and juice of lemon
- 1/2 cup grated parmesan cheese
- 1 package of dried spaghetti noodles (GF)
- 1/2 cup reserved pasta water
- to taste salt and pepper
Method
Step 1
In your always pan, with the steamer basket insert, boil salted water for your pasta noodles and cook per package instructions. Use a separate pot if you don't have an always pan.
Step 2
Once cooked, remove the steamer basket and place on a large plate – reserve 1 cup of pasta water. (If no always pan, drain normally and reserve water)
Step 3
Over low-medium heat, add butter to the pan. Once melted, add shallot and garlic. Cook until shallots are translucent (~3-5 minutes). Add artichokes and cook for another 5 minutes.
Step 4
Add your spices and the Earths’s Own culinary blend; mix well.
Step 5
Add your lemon juice and zest, parmesan cheese, salt and pepper.
Step 6
Add your cooked pasta and mix thoroughly to combine. If the sauce is too thick, slowly add your reserved pasta water until you’ve reached your desired consistency.
Step 7
Serve warm, topped with parmesan.
