- Olive oil
- 1/2 medium onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 peeled and diced into ¼-inch cubes large russet potato
- 24 oz baby bella mushrooms, finely chopped
- 1 packet Siete Mild Taco Seasoning
- Siete Grain Free Taco Shells

Method
Step 1
All olive oil to a large sauté pan or Dutch oven over medium heat.
Step 2
Sauté onions, bell pepper, potatoes, until potatoes have softened.
Step 3
Add mushrooms and continue cooking, stirring often, until mushrooms have softened.
Step 4
Add 1 packet of Spicy or Mild Taco Seasoning along with 1/3 cup water. Simmer for 2-3 minutes, stirring often, until thickened.
Step 5
Serve with pre-crisped taco shells and toppings.
