ingredients
- 2 tbsp avocado oil
- 1 pound white mushroom, chopped
- Siete Whole30 Approved Mild Taco Seasoning
- Siete Grain Free Hard Shell Tacos
- 1 cup diced pineapple
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1 Jar pickled jalapenos
- 1 avocado, diced
- to taste salt and pepper
- thinly sliced iceberg lettuce
- Siete Whole30 Approved Chipotle Hot Sauce
Method
Step 1
Heat a large cast iron skillet over medium-high heat.
Step 2
Add avocado oil and mushrooms.
Step 3
Cook mushrooms until extra moisture has evaporated and mushrooms begin to brown.
Step 4
Add Siete Taco seasoning along with ⅓ cup of water. Cook for an additional 1-2 minutes and set aside.
Step 5
Cook hard taco shells in a preheated oven according to the package.
Step 6
In a medium bowl, combine pineapple, cilantro, lime juice, and 1 minced pickled jalapeño.
Step 7
Fold in diced avocado and season with salt and pepper.
Step 8
To assemble: Fill hard shell taco with mushrooms, top with thinly shredded lettuce and then pineapple/avocado mixture.
Step 9
Top with Siete Chipotle Hot Sauce and serve.
