ingredients
- 3 cups shredded cooked turkey
- 1/2 cup shredded carrots
- 1/2 cup shredded zucchini
- 1/2 cup thinly sliced scallions
- 2 garlic cloves, minced
- 2 eggs
- 1 tablespoon salt
- 1 teaspoon pepper
- 2/3 cup almond flour
- 2 tablespoons avocado oil, for frying
- cranberry sauce, to serve
- chopped parsley, to serve
Method
Step 1
In a bowl, add the turkey, carrots, zucchini, scallions, garlic, eggs, salt and pepper, and almond flour and mix through.
Step 2
Heat the avocado oil in a cast iron skillet over medium heat.
Step 3
Using an ice cream scoop, scoop 2 or 3 scoops of the mixture into the hot pan and flatten them slightly.
Step 4
Cook each side until golden brown (about 5 mins each side).
Step 5
Use a slotted spoon to remove them from oil and drain on towel paper.
Step 6
Serve with fresh parsley and cranberry sauce.
