ingredients

  • 3 tbsp avocado oil
  • 1/2 white onion, diced
  • 1 celery stalk, diced
  • 1/2 cup diced carrot
  • 2 garlic cloves, minced
  • 1/2 cup diced sweet potato
  • 1 cup English peas
  • 12 ounces shredded turkey
  • salt and pepper, to taste
  • 1 tbsp dried oregano
  • 1/3 cup raw cashews
  • 2 cups water
  • Siete Grain Free Burrito Size Tortillas

Method

  • Step 1

    Preheat the oven to 375°F/190°C.

  • Step 2

    In a large pan, add oil, onions, celery, and carrots.

  • Step 3

    Add minced garlic and sweet potato. Cook for 15- 20 minutes until all vegetables are tender.

  • Step 4

    Add peas and shredded turkey. Season with sea salt, pepper, and dried oregano.

  • Step 5

    Blend cashews with water and pour into a pan with turkey. Bring to a simmer and cook until the gravy thickens.

  • Step 6

    Spray a pie pan with avocado spray. Heat 1 burrito tortilla over medium-high heat until pliable and place in pie pan. Bake for 5 minutes.

  • Step 7

    Add filling to pie crust and top with another burrito tortilla (make sure to heat up tortilla before to make it pliable).

  • Step 8

    Lightly tuck the tortilla around the edges to close the “pie” and make 3 small cuts in the center to resemble a pie and let out steam.

  • Step 9

    Bake for 30 minutes or until the edges are golden brown and crisp. Let pot pie cool for 10 mins before slicing.
