Sweet Potato Zucchini Breakfast Hash

ingredients

  • 3 tablespoons avocado oil
  • 1/2 white onion, thinly sliced
  • 1 large sweet potato, peeled and diced
  • 1 zucchini, diced
  • 1 cup fresh spinach
  • salt and pepper, to taste
  • Siete Traditional Hot Sauce
  • 3 eggs
  • to garnish minced chives

Method

  • Step 1

    In a large skillet, add avocado oil and heat to medium-heat.

  • Step 2

    Sauté onions until translucent and add sweet potatoes and zucchini.

  • Step 3

    Sauté until sweet potatoes are tender and start to brown.

  • Step 4

    Add spinach and cook until wilted. Season with salt and pepper.

  • Step 5

    Add 3 tablespoons of Siete Traditional Hot Sauce and mix through.

  • Step 6

    Make 3 wells in the mixture and crack an egg in each well. Season each with salt and pepper.

  • Step 7

    Cover for 2-3 minutes or until egg whites are cooked.

  • Step 8

    Garnish with minced chives and enjoy.
