ingredients
- 2 tbsp coconut oil
- 1/2 yellow onion, thinly sliced
- 3 garlic cloves, minced
- 1 tbsp minced ginger
- 1 large sweet potato, peeled and diced
- 1 can chickpeas, drained and rinsed
- 2 tbsp curry powder
- 1/2 tbsp turmeric powder
- 1 can unsweetened coconut milk
- 1 cup vegetable stock
- 1 cup fresh spinach
- 3 tbsp Siete Habanero Hot Sauce
- salt and pepper
Method
Step 1
Add oil to a medium-sized skillet over medium heat.
Step 2
Add onions, garlic and ginger and cook until the onions are translucent.
Step 3
Add diced potatoes, chickpeas, curry, and turmeric.
Step 4
Add coconut milk and just enough stock to cover all veggies.
Step 5
Simmer on low until sweet potatoes are fork tender.
Step 6
Add spinach and stir until it wilts.
Step 7
Finish with Siete Habanero Hot Sauce, salt and pepper.
Step 8
Serve alongside Siete Chickpea Tortillas and white basmati rice.
