ingredients
- 1/2 pound new potatoes, unpeeled
- 1/2 cup diced celery
- 1/4 cup scallions, thinly sliced
- 1/2 cup vegan mayonnaise
- 1 tbsp Siete Traditional Hot Sauce
- 1/4 cup sweet pickle relish
- 1/2 tbsp apple cider vinegar
- salt and paper, to taste
Method
Step 1
Add potatoes to a pot of water (at room temperature) over medium heat, allowing the potatoes to cook as the water heats up.
Step 2
Once the water starts to boil, they should be fully cooked (fork-tender) in about 12-15 minutes.
Step 3
Leave them whole until they reach room temperature and then carefully slice in half.
Step 4
Combine potatoes with the remaining ingredients and mix well.
Step 5
Refrigerate until ready to serve.
Step 6
Garnish with thinly sliced scallions.
