ingredients
- 10 cups water
- 1 cup pilloncillo
- 2 cinnamon sticks
- 1 star anise
- 1 large guava
- 1 1/4 cups whole tejocote (or red apples)
- 1 cup diced red apples
- 1 cup diced green apples
- 1/2 cup diced pears
- 5 peeled tamarind pods
Method
Step 1
In a large pot, add water, piloncillo or agave, cinnamon sticks, and star anise. Bring to a boil.
Step 2
Add the remaining ingredients and simmer over medium heat for 1- 2 hours uncovered, until the fruit is tender and ponche is sweet.
