ingredients

  • 10 cups water
  • 1 cup pilloncillo
  • 2 cinnamon sticks
  • 1 star anise
  • 1 large guava
  • 1 1/4 cups whole tejocote (or red apples)
  • 1 cup diced red apples
  • 1 cup diced green apples
  • 1/2 cup diced pears
  • 5 peeled tamarind pods

Method

  • Step 1

    In a large pot, add water, piloncillo or agave, cinnamon sticks, and star anise. Bring to a boil. ⁠

  • Step 2

    Add the remaining ingredients and simmer over medium heat for 1- 2 hours uncovered, until the fruit is tender and ponche is sweet. ⁠
