Red Beef Enchiladas

ingredients

  • 1 pound grass-fed ground beef
  • 1 package Siete Mild Taco Seasoning
  • 1 package Siete Almond Tortillas
  • 1 Jar Siete Red Enchilada Sauce
  • 1 Jar Mild Siete Cashew Queso
  • non-dairy crema, to serve
  • chopped cilantro, to serve

Method

  • Step 1

    Preheat the oven to 350°F/180°C.

  • Step 2

    Heat a skillet over medium heat. Cook the beef in avocado oil for about 10 minutes, using a wooden spoon to stir and break up the chunks of beef.

  • Step 3

    Add entire package of Siete Mild Taco Seasoning, and stir to coat. Add 1/3 cup of water, and stir to combine. Set aside.

  • Step 4

    Heat a large skillet or flat griddle over medium-high heat. Cook the tortillas for about 5-10 seconds per side, until they soften and become pliable.

  • Step 5

    Spray an 8x8-inch baking dish with avocado cooking spray.

  • Step 6

    Spread enough of the enchilada sauce to cover the bottom of the dish.

  • Step 7

    Roll each tortilla with the ground beef and place in the dish.

  • Step 8

    Add dollops of cashew queso over the stuffed tortillas. Top with remaining enchilada sauce.

  • Step 9

    Cover the dish with aluminum foil and bake for 15-20 minutes.

  • Step 10

    Take the enchiladas out of the oven and drizzle with favorite dairy-free crema. Garnish with chopped cilantro.
