Queso Smashed Potatoes

ingredients

  • baby potatoes, unpeeled
  • 1/2 cup melted ghee
  • 3 garlic cloves, minced
  • salt and pepper
  • 1 Jar Siete Mild Nacho Cashew Queso
  • 1 cup bacon, cooked and chopped
  • 1 cup dairy free shredded cheese

Method

  • Step 1

    Preheat oven at 375ºF/190°C.

  • Step 2

    In a pot of water, add potatoes, without peeling, and bring to a boil. Cook until fork tender.

  • Step 3

    Drain the potatoes and add to a baking sheet lined with parchment paper.

  • Step 4

    Pour over the melted ghee and garlic, and toss to make sure all the potatoes are evenly coated.

  • Step 5

    Use the bottom of a cup or a firm flat small plate to smash all potatoes.

  • Step 6

    Sprinkle each with salt and pepper.

  • Step 7

    Top each potato with a heaping spoonful of queso, bacon and shredded cheese.

  • Step 8

    Bake for 15-20 mins or until cheese turns golden brown.
