ingredients
- 5 avocado oil
- 1 pound ground turkey
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon sea salt
- 1 teaspoon black pepper
- 1 15 ounce can organic pumpkin puree
- 1 Jar Siete Mild Nacho Cashew Queso
- 1 small yellow onion, thinly sliced
- 1 medium pumpkin
- 1/2 cup dairy free mozzarella cheese
- • avocado oil spray
Method
Step 1
Preheat oven at 400ºF/200°C.
Step 2
Add 3 tbsp avocado oil to a cast iron skillet over medium heat.
Step 3
Add turkey, garlic powder, onion powder, salt and pepper.
Step 4
Once the turkey is cooked, transfer to a bowl.
Step 5
To the same bowl, add pumpkin puree and Siete Dairy Free Mild Nacho Cashew Queso.
Step 6
Add 3 tbsp avocado oil to a cast iron skill and add the yellow onions.
Step 7
Add 1-2 tbsp of water and cook until caramelized (takes about 10-15 mins).
Step 8
Once the onions are caramelized, add the queso-turkey mixture.
Step 9
Cut the top of the pumpkin and carve out the inside.
Step 10
Add the cooked queso-turkey mixture into the pumpkin and top with mozzarella cheese.
Step 11
Use avocado oil spray to lightly spray top of cheese.
Step 12
Bake for 20 mins and then broil on HIGH for 3- 4 mins, or until cheese is golden brown.
Step 13
Serve with Grain Free No Salt Tortilla Chips and enjoy!
