ingredients
- 1/2 cup pumpkin butter
- 4 Siete Grain Free Cashew Tortillas
- avocado oil cooking spray
- 1 tablespoon pumpkin spice
- 1 granulated sugar
Method
Step 1
Preheat oven at 375ºF/190ºC.
Step 2
Heat the tortillas over medium heat for a few seconds on each side until pliable.
Step 3
Take off heat and add pumpkin butter to the center of each tortilla (two tablespoons per tortilla).
Step 4
Fold tortillas in half and seal the edges with a fork. (This will be easier if the tortillas are still warm).
Step 5
Place on a baking sheet with parchment and lightly spray them with avocado oil.
Step 6
Bake for 18 mins or until edges are golden brown and top is crispy.
Step 7
Combine the pumpkin spice with the sugar and mix well.
Step 8
Remove the empanadas from oven and sprinkle each with the pumpkin sugar.
