ingredients

  • 2 tbsp avocado oil
  • 1 pound lean ground beef
  • 4 garlic cloves, minced
  • 1/2 white onion, diced
  • 1/2 jalapeno pepper, seeded and chopped
  • 4 Roma tomatoes, diced
  • 1 gold potato, peeled and diced
  • 1 large carrot, peeled and diced
  • 1 bay leaf
  • 1/3 bunch chopped cilantro
  • salt and pepper, to taste

  • Siete Almond Flour Tortillas
  • Mexican Rice

Method

  • Step 1

    Heat a large skillet over medium-high heat.

  • Step 2

    Add oil and ground beef or turkey. Cook and break meat apart to avoid large lumps.

  • Step 3

    Season with salt and pepper. Fry meat until browned (about 5-8 minutes).

  • Step 4

    Reduce heat to medium-low. Add garlic, onions, and jalapeño. Sauté until onions are translucent.

  • Step 5

    Add tomatoes and let their natural juices come out.

  • Step 6

    Once there is liquid from the tomatoes, add potatoes, carrots, and bay leaf. Cover until potatoes are tender.

  • Step 7

    Remove the lid and add fresh cilantro. Cook picadillo on low until about ¾ liquid has evaporated. Season with salt and pepper if needed.

  • Step 8

    Serve with Mexican rice and Siete Almond Flour Tortillas.
