Beef Marinade
- 4 tablespoons sesame oil
- 4 garlic cloves, minced
- 1 tablespoon fresh grated ginger
- 1 teaspoon ground black pepper
- 1/4 cup coconut aminos
- 1/4 cup coconut sugar
- 1/4 cup scallions, chopped
- 1/2 teaspoon red pepper flakes
- zest of 1 lime

Tacos
- 6 Siete Cassava and Chia Tortillas
- 1 1/2 pounds flank steak
- 1 purple cabbage, shredded
- 1/2 bunch cilantro leaves, chopped
- 2 avocados, cubed
- 2 scallions, sliced
- sesame seeds

Sriracha Mayo
- 1/3 cup sour cream
- 1/4 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon Sriracha hot sauce
- 2 tablespoons lime juice
- 1/4 teaspoon cumin
- 1/4 ground coriander
Method
Step 1
Prepare the beef by slicing it against the grain.
Step 2
Mix all the marinade ingredients together and pour into bowl with the sliced beef. Cover and refrigerate for at least 4 hours.
Step 3
Add the meat to a large cast-iron skillet and sauté for 6-8 mins, stirring occasionally, until the sauce has caramelized.
Step 4
Warm the tortillas on a hot skillet until pliable.
Step 5
In a small bowl, mix together the ingredients for Sriracha mayonnaise, and stir until combined. Add to a squeeze bottle for easier drizzling.
Step 6
Assemble tacos with the remaining taco ingredients.
Step 7
Serve with fresh lime!
