ingredients

  • 2 tbsp avocado oil
  • 2 garlic cloves
  • 1/2 white onion, diced
  • 2 cups cooked black beans
  • 1/2 cup water
  • 2 eggs
  • 1 Jar Siete Whole30 Approved Red Enchilada Sauce
  • avocado cooking spray
  • Siete Grain Free Almond Flour Tortillas
  • Siete Dairy Free Spicy Blanco Cashew Queso
  • pickled red onions

  • fresh cilantro
  • 1 avocado, sliced
  • salt and pepper

Method

  • Step 1

    Heat a skillet over medium heat. Add 1 tbsp avocado oil, garlic, and onions.

  • Step 2

    Cook until onions are translucent and add black beans, salt and pepper. Add ½ cup of water.

  • Step 3

    Mash black beans and cook them down for 5-10 minutes on medium low heat.

  • Step 4

    In a separate skillet, cook eggs sunny side up in 1 tbsp avocado oil. Season to taste with salt and pepper.

  • Step 5

    Heat 1 cup Siete Whole30 Approved Red Enchilada Sauce over medium heat.

  • Step 6

    Heat a skillet over medium-high heat and spray with avocado cooking spray.

  • Step 7

    Spread about 2 tbsp of Siete Dairy Free Spicy Blanco Cashew Queso over a tortilla and top with another tortilla.

  • Step 8

    Grill quesadilla in a skillet until both sides are golden brown.

  • Step 9

    Place quesadilla on a plate and spread black beans over top.

  • Step 10

    Add the eggs over beans and pour over enough warm enchilada sauce to cover tortillas and egg whites, leaving yolks uncovered.

  • Step 11

    Garnish with pickled onions, cilantro and fresh avocado.
