- 3 tablespoons avocado oil
- 2 cups sliced bella mushrooms
- 4 cups green beans, blanched
- 1 Jar Siete Spicy Blanco Cashew Queso
- 1 cup canned coconut milk
- 1 cup vegan mozzarella
- 1/4 cup vegetable stock
- 1/2 cup coconut oil
- 4 Siete Grain Free Chickpea Flour Tortillas
- 1 tablespoon onion powder
- 1 teaspoon garlic powder
- to taste salt and pepper
Method
Step 1
Preheat oven to 350ºF/180°C.
Step 2
Add 3 tablespoons of avocado oil to skillet over high heat.
Step 3
Add mushrooms and sauté until all excess moisture has evaporated.
Step 4
Add green beans and cook for 1-2 mins.
Step 5
Add queso, coconut milk, cheese, and ¼ cup vegetable stock.
Step 6
Bring to a boil, stirring along the way to avoid burning.
Step 7
Heat a cast-iron skillet over medium-high heat and add ½ cup of coconut oil.
Step 8
Cut chickpea tortillas into thin strips and fry in oil until golden brown.
Step 9
Drain and toss in a bowl with garlic powder, onion powder, 1 teaspoon salt, and pepper.
Step 10
Place green bean filling in a baking dish.
Step 11
Top with crispy tortilla chips and bake for 10 mins.
