Recipe Card

ingredients

  • 1 packet active dry yeast
  • 1/4 cup lukewarm water
  • 1/2 cup agave nectar
  • 1/8 tsp anise extract
  • 1/2 cup orange juice
  • 1 navel orange, zested
  • 1/2 cup almond flour
  • 1 1/2 cup cassava flour
  • 2 eggs (1 for egg wash)
  • 1/2 tsp salt
  • 3 tbsp date sugar
  • 2 tbsp melted coconut oil (for brushing)

Method

  • Step 1

    In a large mixing bowl combine ¼ cup water with yeast.

  • Step 2

    Let yeast sit in the water for about 15 minutes until activated.

  • Step 3

    Add agave nectar, 1 egg, anise, orange juice, orange zest, and coconut oil and mix thoroughly.

  • Step 4

    Add almond and cassava flour to the mixture and mix until dough is well combined.

  • Step 5

    Divide dough into 8 equal pieces.

  • Step 6

    Roll 6 of the pieces into balls and place on a sheet lined with parchment or sprayed with non-stick spray.

  • Step 7

    Use remaining 2 balls to roll small thin strips (2 per ball) for each ball.

  • Step 8

    Cross the strips over each ball and place a small dot of dough on top.

  • Step 9

    Lightly cover tray with plastic wrap and place in a warm place for 1-2 hours or until dough slightly rises

  • Step 10

    Preheat the oven to 375ºF/190ºC.

  • Step 11

    Beat 1 egg and use the egg wash for each roll. Bake for 15 minutes or until golden brown.

  • Step 12

    Remove from the oven and brush with melted coconut oil and sprinkle with date sugar.
