ingredients

  • 1 1/2 tablespoons avocado oil
  • 8 ounces sausage, diced
  • 12 ounces shrimp
  • 1 packet Siete Taco Seasoning
  • 1/2 yellow onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 stalks celery, diced
  • 14 ounces cauliflower rice
  • 1 Jar Siete Red Enchilada Sauce
  • 1 1/2 teaspoons garlic powder
  • 1/2 lime, juiced
  • 2 tablespoons green onion, diced

Method

  • Step 1

    Heat oil in a medium saucepan over medium to high heat for 1 minute.

  • Step 2

    Add sausage and shrimp (or portobellos and okra) and sauté until they brown.

  • Step 3

    Add 1 packet of Siete Taco Seasoning. Stir into shrimp and sausage (or vegetables) and set aside.

  • Step 4

    Heat a large skillet or cast-iron over medium-high heat for a 1 ½ minutes.

  • Step 5

    Add the yellow onion, green and red bell pepper, and celery, sauté for 3-4 minutes over a medium heat to achieve color.

  • Step 6

    Add in cauliflower rice and mix into the bell pepper mixture, sauté for an additional 5 minutes.

  • Step 7

    Add 1 jar of Siete Red Enchilada Sauce and garlic powder, let simmer over medium-heat for 10 minutes. The mixture may look thick but it will loosen up when the cauliflower breaks down.

  • Step 8

    Once the mixture has reduced to a thicker consistency, add meat back into the skillet and stir in ingredients thoroughly.

  • Step 9

    Turn heat to low and allow to simmer for a few minutes, allowing the flavors to develop.

  • Step 10

    Take off the heat. Squeeze lime into the mixture and stir once more.

  • Step 11

    Garnish with green onion.
