ingredients
- 3 2/3 cup almond flour
- 1 1/8 cup cassava
- 2 tablespoons pumpkin flour
- 1 tablespoon baking soda
- 1/4 cup arrowroot starch
- 1 1/2 teaspoon salt
- 3 1/2 tablespoons agave nectar or honey
- 1 3/4 cup water
- 1/4 cup coconut oil, melted
- 1 tablespoon apple cider vinegar
- pumpkin or apple butter, to serve
Method
Step 1
Preheat oven to 375ºF/180ºC.
Step 2
Combine almond flour, cassava flour, pumpkin flour, baking soda, arrowroot, and salt in a bowl.
Step 3
In a separate bowl, combine agave, 300 g water, coconut oil, and apple cider vinegar.
Step 4
Whisk wet mixture into dry slowly.
Step 5
Add more warm water until the mixture reaches thick batter consistency.
Step 6
Place mixture in a greased cast iron pan and bake uncovered for 35 mins or until toothpick comes out clean and top is golden brown.
Step 7
Serve with apple or pumpkin butter or enjoy as is!
