ingredients
- 2 tbsp coconut oil
- 3 large diced Granny Smith apples
- 5 tbsp coconut sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 1/2 lemon, juiced
- 1 package Siete Almond Flour Tortilla
- 2/3 cup powdered sugar
- 2 tbsp coconut milk
- 1/4 teaspoon nutmeg
Method
Step 1
Preheat the oven to 350°F/180°C.
Step 2
Heat a large skillet over medium-high heat. Add the coconut oil and diced apples.
Step 3
Add 4 tbsp coconut sugar, vanilla, ½ tsp cinnamon, and sea salt.
Step 4
Cook apples for 10-15 minutes until golden brown and softened. Remove from heat and add lemon juice.
Step 5
Heat each tortilla for 2-3 seconds on each side over medium-high heat.
Step 6
Add about ⅓ cup of the apple filling to each and fold in a triangular shape.
Step 7
Place the turnovers on a tray lined with parchment paper, with folded sides down. Repeat with all tortillas and bake for 12-15 minutes.
Step 8
In a small bowl, combine powdered sugar and coconut milk to create icing. In a separate bowl, combine 1 tbsp coconut sugar, ½ tsp cinnamon and nutmeg.
Step 9
Remove the apple turnovers from the oven. Sprinkle with spiced sugar and drizzle with icing.
